Ingredients:
- 2 large bananas (firm, slightly under-ripe)
- 1 tbsp virgin coconut oil (melted)
- 1/2 tsp fine grain sea salt
- 1 cup cold water
- 2 tbsp fresh lemon juice
- 1/2 tsp ground cinnamon
Instructions:
- Peel the firm bananas and use a mandoline slicer to create uniform rounds exactly 2mm thick.
- Submerge the banana slices in a lemon-water bath (1 cup water mixed with 2 tbsp lemon juice) for 5 minutes to prevent enzymatic browning.
- Lay the slices on a double layer of paper towels and pat firmly until completely dry; moisture is the enemy of crispiness.
- Transfer dry slices to a mixing bowl and toss with melted coconut oil, sea salt, and cinnamon until every slice has a microscopic coating.
- Preheat air fryer to 300°F (150°C). Arrange slices in a single layer in the basket and air fry for 18-20 minutes, shaking the basket halfway through, until golden and rigid.
