Ingredients:

  • 1 large head Cauliflower (approx. 650g), cut into florets
  • 2 tbsp Extra Virgin Olive Oil
  • 1/2 tsp Sea Salt
  • 1/4 tsp Cracked Black Pepper
  • 1 tsp Garlic Powder
  • 1/2 tsp Smoked Paprika
  • 1/2 tsp Onion Powder
  • 1/4 cup Freshly Grated Parmesan Cheese
  • 1 tbsp Fresh Parsley, finely chopped
  • 1 tsp Lemon Zest

Instructions:

  1. Trim the leaves and the bottom of the 650g cauliflower stem.
  2. Slice the head into bite-sized florets, keeping them as uniform as possible. Note: Uniformity ensures they all finish cooking at the exact same time.
  3. Rinse the pieces in cold water and dry them thoroughly with a kitchen towel.
  4. Transfer the dry florets into a large mixing bowl.
  5. Drizzle the 2 tbsp of olive oil over the cauliflower and toss by hand.
  6. Whisk the 1/2 tsp salt, 1/4 tsp pepper, 1 tsp garlic powder, 1/2 tsp smoked paprika, and 1/2 tsp onion powder in a small jar.
  7. Sprinkle the spice mix over the oiled cauliflower and toss again until every floret is stained orange red.
  8. Preheat your air fryer to 200°C (400°F) for 3 minutes.
  9. Spread the cauliflower in the basket in a single layer.
  10. Air fry for 15 minutes, shaking the basket halfway through until the edges are charred and the centers are fork tender.
  11. Add the 1/4 cup Parmesan cheese over the hot cauliflower in the last 2 minutes of cooking.
  12. Garnish with 1 tbsp fresh parsley and 1 tsp lemon zest until the aroma is bright and herbaceous.
