Ingredients:

  • 3 large Granny Smith apples, peeled, cored, and finely diced
  • 1 tsp lemon juice
  • 2.5 tsp ground cinnamon, divided
  • 0.25 tsp ground nutmeg
  • 1 pinch kosher salt
  • 2 tbsp granulated sugar
  • 1 tsp cornstarch
  • 4 tbsp unsalted butter, melted
  • 0.25 cup dark brown sugar, packed
  • 0.5 tsp pure vanilla extract
  • 4 large 10-inch flour tortillas

Instructions:

  1. In a medium bowl, toss the diced apples with lemon juice, 1.5 teaspoons of cinnamon, nutmeg, salt, granulated sugar, and cornstarch.
  2. Transfer the apple mixture to a skillet over medium heat. Sauté for 5 minutes until the apples are tender-crisp and the juices have thickened into a glossy syrup. Remove from heat and let cool slightly.
  3. In a small bowl, whisk together the melted butter, dark brown sugar, the remaining 1 teaspoon of cinnamon, and vanilla extract until well combined.
  4. Lay a tortilla flat. Place 1/4 of the sautéed apple mixture in the center. Fold in the sides and roll tightly from the bottom, burrito-style.
  5. Brush the exterior of the wraps generously with the brown sugar butter mixture. Place in a clean skillet over medium heat, cooking for 2 minutes per side until the sugar caramelizes into a crisp shell.
