Ingredients:
- 4 (6-oz) Cod Fillets
- 1 tsp Smoked Paprika
- 0.5 tsp Sea Salt
- 0.25 tsp Cracked Black Pepper
- 3 tbsp Unsalted Butter, melted
- 1 tbsp Extra Virgin Olive Oil
- 2 tbsp Fresh Lemon Juice
- 1 tsp Lemon Zest
- 3 Garlic Cloves, minced
- 1 tbsp Non-pareil Capers, drained
- 2 tbsp Fresh Parsley, finely chopped
- 4 Lemon slices for presentation
Instructions:
- Preheat your oven to 400°F (200°C). Use paper towels to pat the cod fillets bone-dry on all sides to prevent steaming. Season both sides of the fillets with sea salt, black pepper, and smoked paprika.
- In a small mixing bowl, vigorously whisk together the melted butter, extra virgin olive oil, fresh lemon juice, lemon zest, and minced garlic until the mixture is a stable emulsion.
- Place the seasoned cod fillets in a 9x13 inch ceramic or glass baking dish. Pour the lemon butter mixture evenly over the fish, ensuring each piece is well-coated. Scatter the drained capers around the dish.
- Bake for 12 minutes. The fish is done when it turns from translucent to opaque and reaches an internal temperature of 145°F, or when the thickest part flakes easily with a fork.
- Remove from the oven and garnish with finely chopped fresh parsley and lemon slices before serving immediately.
