Ingredients:

  • 4 (6 oz / 170g) boneless, skinless chicken breasts
  • ½ tsp (3g) sea salt
  • ½ tsp (1g) cracked black pepper
  • 3 tbsp (43g) unsalted butter, melted
  • 2 tbsp (30ml) extra virgin olive oil
  • 4 cloves (12g) fresh garlic, minced
  • 1 tsp (2g) dried oregano
  • 1 tbsp (3g) fresh parsley, chopped

Instructions:

  1. Preheat oven to 400°F (200°C). Pat the chicken breasts completely dry with paper towels to ensure a proper sear and season both sides evenly with salt and pepper.
  2. In a small bowl, whisk together the melted butter, olive oil, minced garlic, and dried oregano until well combined.
  3. Place the seasoned chicken breasts in a 9x13 inch baking dish. Spoon the garlic butter mixture generously over each breast, ensuring total coverage.
  4. Bake for 18–22 minutes, using a meat thermometer to remove the chicken exactly when the internal temperature hits 165°F (74°C).
  5. Remove from the oven and let the chicken rest in the dish for 5 minutes to allow juices to redistribute. Garnish with fresh parsley before serving.
