Ingredients:

  • 4 cups (500g) Green cabbage, shredded
  • 2 cups (250g) Red cabbage, shredded
  • 1 cup (130g) Carrots, julienned or shredded
  • 1/4 cup (15g) Red onion, finely diced
  • 1/2 cup (115g) Mayonnaise
  • 1/4 cup (60ml) Apple cider vinegar
  • 2 tbsp (25g) Granulated sugar
  • 1 tsp (2g) Celery seed
  • 1/2 tsp (3g) Salt
  • 1/4 tsp (1g) Black pepper

Instructions:

  1. Prepare the vegetable base by shredding the green cabbage, red cabbage, and carrots, and finely dicing the red onion. Combine all vegetables in a large mixing bowl.
  2. In a medium whisking bowl, combine mayonnaise, apple cider vinegar, sugar, celery seed, salt, and black pepper. Whisk vigorously until the sugar is completely dissolved and the dressing is glossy and smooth.
  3. Pour the dressing over the vegetable mixture and toss gently using spoons or tongs until every piece of cabbage is evenly coated.
  4. Cover the bowl tightly and refrigerate for at least 1 hour to allow the flavors to infuse and the texture to stabilize.
