Ingredients:
- 4 cups (500g) Green cabbage, shredded
- 2 cups (250g) Red cabbage, shredded
- 1 cup (130g) Carrots, julienned or shredded
- 1/4 cup (15g) Red onion, finely diced
- 1/2 cup (115g) Mayonnaise
- 1/4 cup (60ml) Apple cider vinegar
- 2 tbsp (25g) Granulated sugar
- 1 tsp (2g) Celery seed
- 1/2 tsp (3g) Salt
- 1/4 tsp (1g) Black pepper
Instructions:
- Prepare the vegetable base by shredding the green cabbage, red cabbage, and carrots, and finely dicing the red onion. Combine all vegetables in a large mixing bowl.
- In a medium whisking bowl, combine mayonnaise, apple cider vinegar, sugar, celery seed, salt, and black pepper. Whisk vigorously until the sugar is completely dissolved and the dressing is glossy and smooth.
- Pour the dressing over the vegetable mixture and toss gently using spoons or tongs until every piece of cabbage is evenly coated.
- Cover the bowl tightly and refrigerate for at least 1 hour to allow the flavors to infuse and the texture to stabilize.
