Ingredients:
- 1 lb lean ground beef
- 2 tbsp mild taco seasoning
- 1/4 cup water
- 1 tbsp olive oil
- 4 large flour tortillas
- 2 cups shredded Monterey Jack cheese
- 2 tbsp unsalted butter
Instructions:
- Heat olive oil in a large cast iron skillet or non-stick pan over medium-high heat.
- Add the ground beef to the skillet, breaking it apart with a spatula, and cook until the meat is browned and mahogany-colored.
- Drain all excess fat and liquid from the pan using paper towels or a separate container.
- Stir in the mild taco seasoning and water. Simmer for 2–3 minutes until the liquid reduces to a thick glaze that clings to the meat, then remove the beef from the pan and set aside.
- Wipe the skillet clean and brush one side of a flour tortilla with softened unsalted butter.
- Place the tortilla butter-side down in the skillet.
- Sprinkle a thin layer of shredded cheese over one half of the tortilla.
- Add a generous scoop of the seasoned beef over the cheese layer.
- Top the beef with another layer of shredded cheese to lock the filling in place.
- Fold the tortilla in half and grill over medium-high heat until the exterior is golden brown and the cheese is fully melted.
