Ingredients:

  • 1 lb lean ground beef
  • 2 tbsp mild taco seasoning
  • 1/4 cup water
  • 1 tbsp olive oil
  • 4 large flour tortillas
  • 2 cups shredded Monterey Jack cheese
  • 2 tbsp unsalted butter

Instructions:

  1. Heat olive oil in a large cast iron skillet or non-stick pan over medium-high heat.
  2. Add the ground beef to the skillet, breaking it apart with a spatula, and cook until the meat is browned and mahogany-colored.
  3. Drain all excess fat and liquid from the pan using paper towels or a separate container.
  4. Stir in the mild taco seasoning and water. Simmer for 2–3 minutes until the liquid reduces to a thick glaze that clings to the meat, then remove the beef from the pan and set aside.
  5. Wipe the skillet clean and brush one side of a flour tortilla with softened unsalted butter.
  6. Place the tortilla butter-side down in the skillet.
  7. Sprinkle a thin layer of shredded cheese over one half of the tortilla.
  8. Add a generous scoop of the seasoned beef over the cheese layer.
  9. Top the beef with another layer of shredded cheese to lock the filling in place.
  10. Fold the tortilla in half and grill over medium-high heat until the exterior is golden brown and the cheese is fully melted.
