Ingredients:

  • 2 lbs sweet potatoes, peeled and cubed
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp smoked paprika
  • 1 lb lean ground beef (90/10)
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • salt to taste
  • black pepper to taste
  • 2 cups small curd cottage cheese
  • 1/4 tsp sea salt
  • 1/2 tsp freshly cracked black pepper
  • 1/4 cup honey
  • 1 tbsp sriracha
  • 1/2 tsp red pepper flakes
  • 1 tsp apple cider vinegar

Instructions:

  1. Preheat oven to 425°F (220°C) or air fryer to 400°F (200°C).
  2. Toss the cubed sweet potatoes with 2 tablespoons of olive oil, salt, and smoked paprika. Spread in a single layer on a sheet pan or in an air fryer basket.
  3. Roast for 20-25 minutes, tossing halfway through, until the edges are mahogany-colored and slightly charred.
  4. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  5. Add the ground beef, breaking it apart with a spatula. Season with garlic powder, onion powder, salt, and black pepper.
  6. Cook for 7-10 minutes until browned and slightly crispy on the edges. Drain excess fat if necessary.
  7. In a small saucepan over low heat, whisk together honey, sriracha, red pepper flakes, and apple cider vinegar for 2 minutes until bubbling and fluid.
  8. Assemble the bowls by layering the roasted sweet potatoes, chilled cottage cheese (seasoned with sea salt and pepper), and the savory beef.
  9. Drizzle the hot honey mixture over the top and serve immediately.
