Ingredients:
- 2 lbs sweet potatoes, peeled and cubed
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp smoked paprika
- 1 lb lean ground beef (90/10)
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1/2 tsp onion powder
- salt to taste
- black pepper to taste
- 2 cups small curd cottage cheese
- 1/4 tsp sea salt
- 1/2 tsp freshly cracked black pepper
- 1/4 cup honey
- 1 tbsp sriracha
- 1/2 tsp red pepper flakes
- 1 tsp apple cider vinegar
Instructions:
- Preheat oven to 425°F (220°C) or air fryer to 400°F (200°C).
- Toss the cubed sweet potatoes with 2 tablespoons of olive oil, salt, and smoked paprika. Spread in a single layer on a sheet pan or in an air fryer basket.
- Roast for 20-25 minutes, tossing halfway through, until the edges are mahogany-colored and slightly charred.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Add the ground beef, breaking it apart with a spatula. Season with garlic powder, onion powder, salt, and black pepper.
- Cook for 7-10 minutes until browned and slightly crispy on the edges. Drain excess fat if necessary.
- In a small saucepan over low heat, whisk together honey, sriracha, red pepper flakes, and apple cider vinegar for 2 minutes until bubbling and fluid.
- Assemble the bowls by layering the roasted sweet potatoes, chilled cottage cheese (seasoned with sea salt and pepper), and the savory beef.
- Drizzle the hot honey mixture over the top and serve immediately.
