Ingredients:

  • 1 lb lean ground beef
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 medium sweet potatoes, peeled and cubed (approx. 300g)
  • 1/2 cup water or beef broth
  • 1 tbsp butter
  • 1 cup low-fat cottage cheese
  • 2 tbsp hot honey
  • 1/2 ripe avocado, sliced
  • 1 tsp red pepper flakes
  • Fresh cilantro or chopped green onions for garnish

Instructions:

  1. Steam the cubed sweet potatoes in a pot with water or beef broth for 10-12 minutes, or microwave for 5-7 minutes until fork-tender.
  2. Drain any excess liquid from the sweet potatoes, add butter, and mash with a fork until the texture is velvety. Set aside to keep warm.
  3. Heat olive oil in a large skillet over medium-high heat. Add the ground beef, breaking it apart with a spatula.
  4. Sprinkle in the garlic powder, smoked paprika, salt, and pepper. Cook until the beef is mahogany-colored and no longer pink (about 7-9 minutes).
  5. Divide the mashed sweet potatoes evenly among four bowls.
  6. Top each bowl with a generous scoop of seasoned ground beef and a large dollop of chilled cottage cheese in the center.
  7. Finish by drizzling hot honey over the top and garnishing with avocado slices, red pepper flakes, and fresh cilantro or green onions.
