Ingredients:
- 1 lb lean ground beef
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 medium sweet potatoes, peeled and cubed (approx. 300g)
- 1/2 cup water or beef broth
- 1 tbsp butter
- 1 cup low-fat cottage cheese
- 2 tbsp hot honey
- 1/2 ripe avocado, sliced
- 1 tsp red pepper flakes
- Fresh cilantro or chopped green onions for garnish
Instructions:
- Steam the cubed sweet potatoes in a pot with water or beef broth for 10-12 minutes, or microwave for 5-7 minutes until fork-tender.
- Drain any excess liquid from the sweet potatoes, add butter, and mash with a fork until the texture is velvety. Set aside to keep warm.
- Heat olive oil in a large skillet over medium-high heat. Add the ground beef, breaking it apart with a spatula.
- Sprinkle in the garlic powder, smoked paprika, salt, and pepper. Cook until the beef is mahogany-colored and no longer pink (about 7-9 minutes).
- Divide the mashed sweet potatoes evenly among four bowls.
- Top each bowl with a generous scoop of seasoned ground beef and a large dollop of chilled cottage cheese in the center.
- Finish by drizzling hot honey over the top and garnishing with avocado slices, red pepper flakes, and fresh cilantro or green onions.
