Ingredients:
- 1 French baguette, sliced into ½-inch rounds
- 2 tbsp extra virgin olive oil
- 4 oz plain goat cheese, softened
- 2 tbsp plain non-fat Greek yogurt
- 1 tsp lemon zest
- ⅛ tsp kosher salt
- Pinch of freshly ground black pepper
- 1 cup fresh blackberries, halved lengthwise
- 1 tbsp honey
- 8 fresh mint leaves, torn
Instructions:
- Preheat your oven to 400°F (200°C).
- Arrange the baguette slices on a baking sheet and lightly brush the tops with olive oil.
- Toast for 5–7 minutes until the edges are mahogany-colored and the center is firm to the touch.
- Remove the crostini from the oven and let them cool completely to prevent the cheese from melting.
- In a food processor or mixing bowl, combine the softened goat cheese, Greek yogurt, lemon zest, salt, and pepper.
- Blend or whisk until the mixture is airy and velvety.
- Spoon a generous dollop of the whipped goat cheese onto each cooled crostini, smoothing it to the edges.
- Press a blackberry half firmly into the center of the cheese to anchor it.
- Drizzle a tiny amount of honey over the berry and garnish with a torn mint leaf.
