Ingredients:

  • 1 French baguette, sliced into ½-inch rounds
  • 2 tbsp extra virgin olive oil
  • 4 oz plain goat cheese, softened
  • 2 tbsp plain non-fat Greek yogurt
  • 1 tsp lemon zest
  • ⅛ tsp kosher salt
  • Pinch of freshly ground black pepper
  • 1 cup fresh blackberries, halved lengthwise
  • 1 tbsp honey
  • 8 fresh mint leaves, torn

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Arrange the baguette slices on a baking sheet and lightly brush the tops with olive oil.
  3. Toast for 5–7 minutes until the edges are mahogany-colored and the center is firm to the touch.
  4. Remove the crostini from the oven and let them cool completely to prevent the cheese from melting.
  5. In a food processor or mixing bowl, combine the softened goat cheese, Greek yogurt, lemon zest, salt, and pepper.
  6. Blend or whisk until the mixture is airy and velvety.
  7. Spoon a generous dollop of the whipped goat cheese onto each cooled crostini, smoothing it to the edges.
  8. Press a blackberry half firmly into the center of the cheese to anchor it.
  9. Drizzle a tiny amount of honey over the berry and garnish with a torn mint leaf.
