Ingredients:
- 1 cup fresh blackberries
- 1/4 cup balsamic vinegar
- 1/3 cup extra virgin olive oil
- 1 tbsp honey
- 1 tsp Dijon mustard
- 1/4 tsp kosher salt
- 1/4 tsp black pepper
- 6 oz mixed baby greens
- 4 oz goat cheese, crumbled
- 1/2 cup pecans, toasted
- 1/4 cup red onion, thinly sliced
- 1/2 cup fresh blackberries
Instructions:
- Place the 1 cup of blackberries in a blender or food processor and pulse until completely smooth.
- In a medium bowl, whisk together the blackberry puree, balsamic vinegar, honey, Dijon mustard, salt, and pepper until the mixture is homogeneous.
- While whisking constantly, slowly drizzle in the olive oil until the dressing is thickened, glossy, and emulsified.
- Wash the mixed greens and use a salad spinner until they are bone-dry.
- Toss the dried greens with the blackberry vinaigrette in a large mixing bowl.
- Top the salad with crumbled goat cheese, toasted pecans, thinly sliced red onion, and fresh blackberry garnish.
