Ingredients:

  • 1 cup fresh blackberries
  • 1/4 cup balsamic vinegar
  • 1/3 cup extra virgin olive oil
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 6 oz mixed baby greens
  • 4 oz goat cheese, crumbled
  • 1/2 cup pecans, toasted
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup fresh blackberries

Instructions:

  1. Place the 1 cup of blackberries in a blender or food processor and pulse until completely smooth.
  2. In a medium bowl, whisk together the blackberry puree, balsamic vinegar, honey, Dijon mustard, salt, and pepper until the mixture is homogeneous.
  3. While whisking constantly, slowly drizzle in the olive oil until the dressing is thickened, glossy, and emulsified.
  4. Wash the mixed greens and use a salad spinner until they are bone-dry.
  5. Toss the dried greens with the blackberry vinaigrette in a large mixing bowl.
  6. Top the salad with crumbled goat cheese, toasted pecans, thinly sliced red onion, and fresh blackberry garnish.
