Ingredients:
- 2 cups (300g) Roma tomatoes, seeded and finely diced
- 1/4 cup (10g) fresh basil, chiffonade
- 1 tbsp (15ml) extra virgin olive oil
- 1 clove (3g) garlic, minced
- 1/2 tsp (3g) sea salt
- 1/4 tsp (1g) cracked black pepper
- 10.6 oz (300g) Boursin Garlic & Fine Herbs cheese
- 2 tbsp (30ml) balsamic glaze
- 1 tsp (2g) lemon zest
Instructions:
- Slice Roma tomatoes in half, scoop out the seeds, and dice the remaining flesh into small, uniform cubes.
- In a medium mixing bowl, combine the diced tomatoes, minced garlic, and extra virgin olive oil.
- Gently fold in the sliced basil, sea salt, and cracked black pepper. Let the mixture sit for 10 minutes at room temperature to allow flavors to marry.
- Allow the Boursin cheese to soften for approximately 15 minutes out of the refrigerator for easier spreading.
- Transfer the softened Boursin cheese to a wide, shallow serving dish.
- Use an offset spatula or butter knife to smooth the surface of the cheese into an even bed.
- Spoon the prepared tomato medley evenly over the top of the cheese base.
- Drizzle the balsamic glaze over the tomatoes and garnish with lemon zest before serving.
