Ingredients:

  • 2 cups (300g) Roma tomatoes, seeded and finely diced
  • 1/4 cup (10g) fresh basil, chiffonade
  • 1 tbsp (15ml) extra virgin olive oil
  • 1 clove (3g) garlic, minced
  • 1/2 tsp (3g) sea salt
  • 1/4 tsp (1g) cracked black pepper
  • 10.6 oz (300g) Boursin Garlic & Fine Herbs cheese
  • 2 tbsp (30ml) balsamic glaze
  • 1 tsp (2g) lemon zest

Instructions:

  1. Slice Roma tomatoes in half, scoop out the seeds, and dice the remaining flesh into small, uniform cubes.
  2. In a medium mixing bowl, combine the diced tomatoes, minced garlic, and extra virgin olive oil.
  3. Gently fold in the sliced basil, sea salt, and cracked black pepper. Let the mixture sit for 10 minutes at room temperature to allow flavors to marry.
  4. Allow the Boursin cheese to soften for approximately 15 minutes out of the refrigerator for easier spreading.
  5. Transfer the softened Boursin cheese to a wide, shallow serving dish.
  6. Use an offset spatula or butter knife to smooth the surface of the cheese into an even bed.
  7. Spoon the prepared tomato medley evenly over the top of the cheese base.
  8. Drizzle the balsamic glaze over the tomatoes and garnish with lemon zest before serving.
