Ingredients:

  • 4 (6 oz / 170g) boneless, skinless chicken breasts
  • 2 tbsp (30ml) avocado oil or olive oil
  • 1 tsp (5g) kosher salt
  • ½ tsp (3g) cracked black pepper
  • 1 tsp (5g) garlic powder
  • 5.3 oz (150g) Garlic & Fine Herbs Boursin cheese, softened
  • 2 cups (60g) fresh baby spinach, finely chopped
  • ¼ cup (25g) grated Parmesan cheese
  • 1 tbsp (15ml) fresh lemon juice

Instructions:

  1. Place chicken breasts between two sheets of plastic wrap and use a mallet to pound the thickest part until the breast is a uniform 1-inch (2.5cm) thickness.
  2. Slice a horizontal pocket into the side of each breast, being careful not to cut all the way through to the other side.
  3. Season the exterior of the chicken generously with salt, pepper, and garlic powder.
  4. In a small bowl, fold together the softened Boursin, chopped spinach, Parmesan, and lemon juice.
  5. Spoon roughly 2 tbsp (30g) of the cheese mixture into each chicken pocket.
  6. Press the edges of the meat firmly together to close the pocket; secure the opening with 2-3 toothpicks if necessary.
  7. Heat oil in an oven-safe skillet over medium-high heat until shimmering.
  8. Sear chicken for 3-5 minutes per side without moving them, until a deep mahogany crust forms.
  9. Transfer the skillet directly into a preheated oven at 400°F (200°C) for 8-12 minutes or until internal temperature reaches safe levels.
