Ingredients:
- 4 (6 oz / 170g) boneless, skinless chicken breasts
- 2 tbsp (30ml) avocado oil or olive oil
- 1 tsp (5g) kosher salt
- ½ tsp (3g) cracked black pepper
- 1 tsp (5g) garlic powder
- 5.3 oz (150g) Garlic & Fine Herbs Boursin cheese, softened
- 2 cups (60g) fresh baby spinach, finely chopped
- ¼ cup (25g) grated Parmesan cheese
- 1 tbsp (15ml) fresh lemon juice
Instructions:
- Place chicken breasts between two sheets of plastic wrap and use a mallet to pound the thickest part until the breast is a uniform 1-inch (2.5cm) thickness.
- Slice a horizontal pocket into the side of each breast, being careful not to cut all the way through to the other side.
- Season the exterior of the chicken generously with salt, pepper, and garlic powder.
- In a small bowl, fold together the softened Boursin, chopped spinach, Parmesan, and lemon juice.
- Spoon roughly 2 tbsp (30g) of the cheese mixture into each chicken pocket.
- Press the edges of the meat firmly together to close the pocket; secure the opening with 2-3 toothpicks if necessary.
- Heat oil in an oven-safe skillet over medium-high heat until shimmering.
- Sear chicken for 3-5 minutes per side without moving them, until a deep mahogany crust forms.
- Transfer the skillet directly into a preheated oven at 400°F (200°C) for 8-12 minutes or until internal temperature reaches safe levels.
