Ingredients:
- 12 oz (340g) whole wheat spaghetti
- 1 tsp (5g) sea salt
- 1 lb (450g) Brussels sprouts, ends trimmed and finely shredded
- 2 tbsp (30ml) extra virgin olive oil
- 3 cloves (15g) garlic, thinly sliced
- 4 oz (115g) center-cut turkey bacon, diced
- 1/2 tsp (3g) red pepper flakes
- 1/2 cup (50g) grated Parmesan cheese
- 1 medium (50ml) lemon, zested and juiced
- 1/4 cup (60ml) reserved pasta cooking water
- 1/4 cup (15g) fresh parsley, chopped
- salt to taste
- black pepper to taste
Instructions:
- Bring a large pot of salted water to a rolling boil.
- Shred the Brussels sprouts using a grater or food processor until they look like coarse confetti.
- Prepare the sliced garlic and dice the turkey bacon.
- Add the pasta to the boiling water and cook according to package directions for al dente.
- While the pasta cooks, heat 2 tbsp of olive oil in a wide skillet over medium-high heat.
- Sauté the diced turkey bacon until crisp and mahogany-colored.
- Add the shredded sprouts in a single layer. Let them sit undisturbed for 2-3 minutes to develop a deep sear, then stir and cook for another 3-4 minutes until tender-crisp.
- Stir in the sliced garlic and red pepper flakes; cook for 60 seconds until fragrant.
- Reserve 1/4 cup of pasta cooking water, then drain the pasta.
- Toss the pasta directly into the skillet with the sprouts.
- Stir in the reserved pasta water, lemon juice, lemon zest, and Parmesan cheese, tossing until a silky emulsion forms.
- Fold in the chopped fresh parsley and season with salt and black pepper to taste.
