Ingredients:
- 1 lb pizza dough
- 1 tbsp extra virgin olive oil
- 2 tbsp coarse yellow cornmeal
- 2 cups cooked chicken breast, shredded
- 1.5 cups low-moisture mozzarella cheese, freshly shredded
- 1/4 cup gorgonzola or blue cheese crumbles
- 1/4 small red onion, thinly shaved
- 1/3 cup cayenne pepper hot sauce
- 2 tbsp unsalted butter, melted
- 1/2 tsp garlic powder
- 1 tbsp honey
- 2 tbsp ranch or blue cheese dressing
- 2 tbsp fresh chives, finely sliced
Instructions:
- Place a pizza stone or inverted baking sheet on the lowest rack and preheat oven to 500°F (260°C) for at least 30 minutes.
- In a large mixing bowl, whisk together the hot sauce, melted butter, garlic powder, and honey until emulsified.
- Toss the shredded cooked chicken in the buffalo sauce mixture until every piece is thoroughly coated.
- Stretch the pizza dough on a surface dusted with cornmeal. Brush the rim with olive oil.
- Layer the mozzarella, buffalo chicken, red onions, and blue cheese crumbles over the dough.
- Slide the pizza onto the preheated stone and bake for 10-12 minutes until the crust is mahogany-colored and the cheese is blistering.
- Drizzle with ranch dressing and garnish with fresh chives before slicing.
