Ingredients:

  • 1 lb pizza dough
  • 1 tbsp extra virgin olive oil
  • 2 tbsp coarse yellow cornmeal
  • 2 cups cooked chicken breast, shredded
  • 1.5 cups low-moisture mozzarella cheese, freshly shredded
  • 1/4 cup gorgonzola or blue cheese crumbles
  • 1/4 small red onion, thinly shaved
  • 1/3 cup cayenne pepper hot sauce
  • 2 tbsp unsalted butter, melted
  • 1/2 tsp garlic powder
  • 1 tbsp honey
  • 2 tbsp ranch or blue cheese dressing
  • 2 tbsp fresh chives, finely sliced

Instructions:

  1. Place a pizza stone or inverted baking sheet on the lowest rack and preheat oven to 500°F (260°C) for at least 30 minutes.
  2. In a large mixing bowl, whisk together the hot sauce, melted butter, garlic powder, and honey until emulsified.
  3. Toss the shredded cooked chicken in the buffalo sauce mixture until every piece is thoroughly coated.
  4. Stretch the pizza dough on a surface dusted with cornmeal. Brush the rim with olive oil.
  5. Layer the mozzarella, buffalo chicken, red onions, and blue cheese crumbles over the dough.
  6. Slide the pizza onto the preheated stone and bake for 10-12 minutes until the crust is mahogany-colored and the cheese is blistering.
  7. Drizzle with ranch dressing and garnish with fresh chives before slicing.
