Ingredients:
- 5.3 oz (150g) Boursin Garlic & Fine Herbs cheese
- 2 cups (300g) cherry tomatoes
- 2 tbsp (30ml) extra virgin olive oil
- 4 cloves (20g) garlic, smashed
- ½ tsp (3g) kosher salt
- ¼ tsp (1g) cracked black pepper
- 1 lb (450g) rigatoni or penne pasta
- 2 cups (60g) fresh baby spinach
- 1 tbsp (15g) unsalted butter
- ¼ cup (25g) grated Parmesan cheese
- ¼ cup (10g) fresh basil leaves, chiffonade
- 1 cup (240ml) reserved pasta water
Instructions:
- Preheat your oven to 400°F (200°C).
- Place the Boursin cheese puck directly in the center of a 9x13 inch baking dish.
- Scatter cherry tomatoes and smashed garlic cloves around the cheese.
- Drizzle olive oil over the tomatoes and garlic, then season with salt and pepper.
- Roast for 20 minutes, or until the tomatoes have burst and the cheese is softened and slightly golden on the edges.
- While vegetables roast, bring a large pot of salted water to a boil, add pasta, and cook until al dente.
- Before draining the pasta, reserve 1 cup (240ml) of the starchy pasta water.
- Remove the baking dish from the oven. Mash the roasted tomatoes and stir them into the melted Boursin cheese until a smooth sauce forms.
- Fold in the baby spinach and allow the residual heat to wilt the greens.
- Add the cooked pasta to the dish and toss vigorously.
- Gradually pour in the reserved pasta water, ¼ cup at a time, stirring until the sauce is glossy and velvet.
- Stir in the Parmesan cheese and butter for a final sheen, then garnish with fresh basil.
