Ingredients:
- 3 large eggs (room temperature)
- 1/2 cup whole milk (room temperature)
- 1/2 cup all-purpose flour (65g)
- 1 tbsp granulated sugar
- 1 tsp vanilla extract
- 1/4 tsp kosher salt
- 3 tbsp unsalted butter
- 1 pinch nutmeg
- 1 tsp lemon zest
Instructions:
- Place a 10-inch cast iron skillet on the middle rack of the oven and preheat to 425°F (220°C).
- While the oven heats, combine eggs, milk, flour, sugar, vanilla, and salt in a blender.
- Blend on high for 30 seconds until the mixture is completely smooth and slightly frothy.
- Once the oven is at temperature, carefully remove the hot skillet using oven mitts and drop the butter into the pan.
- Swirl the butter until it is melted, bubbling, and just starting to turn golden brown.
