Ingredients:

  • 3 large eggs (room temperature)
  • 1/2 cup whole milk (room temperature)
  • 1/2 cup all-purpose flour (65g)
  • 1 tbsp granulated sugar
  • 1 tsp vanilla extract
  • 1/4 tsp kosher salt
  • 3 tbsp unsalted butter
  • 1 pinch nutmeg
  • 1 tsp lemon zest

Instructions:

  1. Place a 10-inch cast iron skillet on the middle rack of the oven and preheat to 425°F (220°C).
  2. While the oven heats, combine eggs, milk, flour, sugar, vanilla, and salt in a blender.
  3. Blend on high for 30 seconds until the mixture is completely smooth and slightly frothy.
  4. Once the oven is at temperature, carefully remove the hot skillet using oven mitts and drop the butter into the pan.
  5. Swirl the butter until it is melted, bubbling, and just starting to turn golden brown.
