Ingredients:
- 10 large passion fruits
- 4 cups filtered water
- 1/3 cup simple syrup
- 1 pinch sea salt
- 4 fresh mint sprigs
Instructions:
- Cut the passion fruits in half over a bowl to catch any escaping juice. Use a spoon to scoop the golden pulp and black seeds into a blender.
- Add 1 cup of filtered water to the blender. Use the pulse setting for 3-5 short bursts to detach the pulp from the seeds without breaking the seeds.
- Pour the mixture through a fine-mesh sieve into a pitcher. Use a spatula to press the solids to extract all nectar, then discard the seeds.
- Add the remaining 3 cups of water, simple syrup, and sea salt to the pitcher. Stir vigorously to aerate the juice and serve over ice garnished with mint.
