Ingredients:

  • 1 lb sirloin steak, cut into 1-inch cubes
  • 1/2 tsp kosher salt
  • 1/2 tsp coarse black pepper
  • 1 tbsp avocado oil
  • 3 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1 tsp Worcestershire sauce
  • 1 tbsp fresh parsley, finely chopped

Instructions:

  1. Pat the steak cubes completely dry with paper towels and season generously with salt and pepper.
  2. Heat the avocado oil in a 12-inch cast iron skillet over high heat until it just begins to smoke.
  3. Add steak bites in a single layer without crowding the pan. Sear undisturbed for 2 minutes, then flip and sear for another 2 minutes.
  4. Reduce heat to medium. Add the unsalted butter, minced garlic, and Worcestershire sauce.
  5. Stir constantly for 1–2 minutes as the butter foams and the garlic becomes fragrant.
  6. Remove from heat immediately and garnish with finely chopped fresh parsley.
