Ingredients:

  • 3 cups (450g) fresh blackberries
  • 1/2 cup (100g) granulated sugar
  • 2 tbsp (30ml) fresh lemon juice
  • 2 tbsp (30ml) water

Instructions:

  1. Place the fresh blackberries, granulated sugar, lemon juice, and water into the saucepan. Stir gently to ensure the sugar is evenly distributed among the berries.
  2. Set the heat to medium-high and bring the mixture to a boil. Once bubbling, reduce the heat to medium and simmer for 8–10 minutes, stirring frequently to prevent the sugar from scorching, until the liquid has reduced to a glossy, syrupy consistency.
  3. Remove the pan from the heat. For a rustic sauce, leave as is; for a smooth glaze, press the sauce through a fine-mesh strainer into a bowl, discarding the seeds.
