Ingredients:

  • 4 Cod Fillets (6 oz each, 1-inch thick)
  • 1 tsp Sea salt
  • 0.5 tsp Cracked black pepper
  • 0.5 tsp Smoked paprika
  • 4 tbsp Unsalted butter, melted
  • 3 cloves Garlic, minced
  • 1 tbsp Fresh lemon juice
  • 1 tsp Lemon zest, finely grated
  • 1 tbsp Fresh Italian parsley, finely chopped
  • 0.25 tsp Red pepper flakes

Instructions:

  1. Preheat the oven. Set it to 400°F (200°C) and place the rack in the center. Note: This high heat ensures the fish cooks through before it has time to dry out.
  2. Dry the fish. Pat the 4 Cod Fillets bone dry with paper towels on all sides. Note: Moisture on the surface will steam the fish instead of roasting it.
  3. Season the fillets. Sprinkle 1 tsp Sea salt, 0.5 tsp Cracked black pepper, and 0.5 tsp Smoked paprika evenly over the cod.
  4. Create the butter base. Melt 4 tbsp Unsalted butter in a small bowl.
  5. Infuse the aromatics. Stir 3 cloves minced Garlic, 1 tbsp Fresh lemon juice, 1 tsp Lemon zest, and 0.25 tsp Red pepper flakes into the butter.
  6. Coat the fish. Place fillets in a baking dish and pour the garlic butter mixture over them. Ensure each piece is submerged in the golden liquid.
  7. Roast the cod. Bake for 15 minutes until the fish flakes easily with a fork.
  8. Add the finish. Remove from the oven and immediately spoon the hot pan juices back over the fish.
  9. Garnish and serve. Sprinkle 1 tbsp Fresh Italian parsley over the top until vibrant and aromatic.
  10. Rest briefly. Let the dish sit for 3 minutes before serving to allow the juices to redistribute.
