Ingredients:
- 1 cup unsweetened almond milk
- 1/4 cup plain Greek yogurt
- 2 cups fresh baby spinach
- 1/4 cup fresh mint leaves, stems removed
- 1/2 cup English cucumber, sliced
- 1 large frozen banana, broken into chunks
- 1 tbsp chia seeds
- 1/4 cup frozen pineapple (optional)
- 1 tbsp cacao nibs (optional)
Instructions:
- Pour the unsweetened almond milk and plain Greek yogurt into the blender base.
- Add the fresh baby spinach and mint leaves. Blend these liquid and green ingredients first until completely smooth to ensure a 'no-fleck' consistency.
- Add the sliced cucumber, frozen banana chunks, and chia seeds to the mixture.
- Blend on high speed for 30–45 seconds until a vortex forms in the center and the texture is velvety.
- If the smoothie is too thick, add an extra tablespoon of liquid at a time until the desired consistency is reached. Serve immediately.
