Ingredients:

  • 1 cup unsweetened almond milk
  • 1/4 cup plain Greek yogurt
  • 2 cups fresh baby spinach
  • 1/4 cup fresh mint leaves, stems removed
  • 1/2 cup English cucumber, sliced
  • 1 large frozen banana, broken into chunks
  • 1 tbsp chia seeds
  • 1/4 cup frozen pineapple (optional)
  • 1 tbsp cacao nibs (optional)

Instructions:

  1. Pour the unsweetened almond milk and plain Greek yogurt into the blender base.
  2. Add the fresh baby spinach and mint leaves. Blend these liquid and green ingredients first until completely smooth to ensure a 'no-fleck' consistency.
  3. Add the sliced cucumber, frozen banana chunks, and chia seeds to the mixture.
  4. Blend on high speed for 30–45 seconds until a vortex forms in the center and the texture is velvety.
  5. If the smoothie is too thick, add an extra tablespoon of liquid at a time until the desired consistency is reached. Serve immediately.
