Ingredients:

  • 3 medium over-ripe bananas, mashed (approx. 1 ½ cups / 340g)
  • ½ cup (115g) unsalted butter, melted and cooled
  • ¾ cup (150g) light brown sugar, packed
  • 1 large egg, room temperature
  • 1 tsp (5ml) pure vanilla extract
  • 1 ½ cups (190g) all-purpose flour
  • 1 tsp (5g) baking soda
  • ½ tsp (3g) salt
  • 1 tsp (2g) ground cinnamon

Instructions:

  1. Heat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan with butter or line it with parchment paper.
  2. Mash the bananas in a large bowl until they are a smooth, liquid like puree.
  3. Stir in the melted butter, brown sugar, egg, and vanilla. Mix until the batter looks glossy and emulsified.
  4. Whisk the flour, baking soda, salt, and cinnamon in a separate medium bowl.
  5. Gradually pour the dry ingredients into the banana mixture.
  6. Fold the batter using a rubber spatula until no streaks of white flour remain. Note: Stop immediately to avoid a rubbery loaf.
  7. Pour the batter into your prepared pan and smooth the top with your spatula.
  8. Bake for 60 to 65 minutes until the top is deep mahogany and a toothpick comes out clean.
  9. Let the loaf sit in the pan for 10 minutes.
  10. Move it to a wire rack to cool completely before slicing.
