Ingredients:
- 3 medium over-ripe bananas, mashed (approx. 1 ½ cups / 340g)
- ½ cup (115g) unsalted butter, melted and cooled
- ¾ cup (150g) light brown sugar, packed
- 1 large egg, room temperature
- 1 tsp (5ml) pure vanilla extract
- 1 ½ cups (190g) all-purpose flour
- 1 tsp (5g) baking soda
- ½ tsp (3g) salt
- 1 tsp (2g) ground cinnamon
Instructions:
- Heat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan with butter or line it with parchment paper.
- Mash the bananas in a large bowl until they are a smooth, liquid like puree.
- Stir in the melted butter, brown sugar, egg, and vanilla. Mix until the batter looks glossy and emulsified.
- Whisk the flour, baking soda, salt, and cinnamon in a separate medium bowl.
- Gradually pour the dry ingredients into the banana mixture.
- Fold the batter using a rubber spatula until no streaks of white flour remain. Note: Stop immediately to avoid a rubbery loaf.
- Pour the batter into your prepared pan and smooth the top with your spatula.
- Bake for 60 to 65 minutes until the top is deep mahogany and a toothpick comes out clean.
- Let the loaf sit in the pan for 10 minutes.
- Move it to a wire rack to cool completely before slicing.
