- 1 lb 93% lean ground beef
- 1 tbsp olive oil
- 1/2 cup water
- 1 tbsp fresh lime juice
- 1 tbsp chili powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- 2 cups shredded romaine lettuce
- 1 cup diced Roma tomatoes
- 1/2 cup diced red onion
- 1/2 cup fresh cilantro, chopped
- 1 cup shredded sharp cheddar
- 1 ripe avocado, sliced
- 1/2 cup Greek yogurt
- 12 corn tortillas
Instructions:
- Heat olive oil in a 12-inch skillet over medium-high heat. Add the ground beef, breaking it apart with a spatula, and cook until browned and no longer pink.
- Push the meat to the sides of the pan to create a clear space in the center. Add the chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and black pepper, toasting for 30-60 seconds until fragrant.
- Stir the toasted spices into the meat, then pour in the water and lime juice.
- Reduce heat to medium-low and simmer for 5-7 minutes until the liquid has reduced to a thick, glossy glaze.
- While the meat simmers, prepare the topping station by arranging shredded lettuce, diced tomatoes, red onion, chopped cilantro, shredded cheddar, sliced avocado, and Greek yogurt in small bowls.
- Warm the tortillas and serve the taco filling alongside the topping station for family assembly.
