Ingredients:

  • 1 lb 93% lean ground beef
  • 1 tbsp olive oil
  • 1/2 cup water
  • 1 tbsp fresh lime juice
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 2 cups shredded romaine lettuce
  • 1 cup diced Roma tomatoes
  • 1/2 cup diced red onion
  • 1/2 cup fresh cilantro, chopped
  • 1 cup shredded sharp cheddar
  • 1 ripe avocado, sliced
  • 1/2 cup Greek yogurt
  • 12 corn tortillas

Instructions:

  1. Heat olive oil in a 12-inch skillet over medium-high heat. Add the ground beef, breaking it apart with a spatula, and cook until browned and no longer pink.
  2. Push the meat to the sides of the pan to create a clear space in the center. Add the chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and black pepper, toasting for 30-60 seconds until fragrant.
  3. Stir the toasted spices into the meat, then pour in the water and lime juice.
  4. Reduce heat to medium-low and simmer for 5-7 minutes until the liquid has reduced to a thick, glossy glaze.
  5. While the meat simmers, prepare the topping station by arranging shredded lettuce, diced tomatoes, red onion, chopped cilantro, shredded cheddar, sliced avocado, and Greek yogurt in small bowls.
  6. Warm the tortillas and serve the taco filling alongside the topping station for family assembly.
