Ingredients:
- 2 (6 oz / 170g) Ahi Tuna Steaks
- 3 tbsp (15g) White sesame seeds
- 3 tbsp (15g) Black sesame seeds
- 1 tbsp (15ml) Neutral oil
- 2 tbsp (30ml) Soy sauce
- 1 tbsp (15ml) Toasted sesame oil
- 1 tbsp (15g) Honey
- 1 tsp (5g) Freshly grated ginger
- 1 clove (3g) Garlic, minced
Instructions:
- Pat the tuna steaks bone-dry with paper towels to ensure a crisp crust.
- In a small bowl, whisk together soy sauce, sesame oil, honey, ginger, and garlic.
- Brush the marinade over the tuna or let it soak for 10–15 minutes.
- Combine black and white sesame seeds on a flat plate and press each side of the marinated tuna firmly into the seeds until fully coated.
- Heat neutral oil in a cast iron skillet over medium-high heat until it shimmers and begins to smoke.
- Place tuna in the pan and sear for exactly 45–60 seconds per side until a mahogany crust forms.
- Transfer steaks to a cutting board and let them rest for 2 minutes.
- Slice the tuna into 1/2 inch (1.25cm) thick pieces using a sharp knife.
