Ingredients:

  • 2 (6 oz / 170g) Ahi Tuna Steaks
  • 3 tbsp (15g) White sesame seeds
  • 3 tbsp (15g) Black sesame seeds
  • 1 tbsp (15ml) Neutral oil
  • 2 tbsp (30ml) Soy sauce
  • 1 tbsp (15ml) Toasted sesame oil
  • 1 tbsp (15g) Honey
  • 1 tsp (5g) Freshly grated ginger
  • 1 clove (3g) Garlic, minced

Instructions:

  1. Pat the tuna steaks bone-dry with paper towels to ensure a crisp crust.
  2. In a small bowl, whisk together soy sauce, sesame oil, honey, ginger, and garlic.
  3. Brush the marinade over the tuna or let it soak for 10–15 minutes.
  4. Combine black and white sesame seeds on a flat plate and press each side of the marinated tuna firmly into the seeds until fully coated.
  5. Heat neutral oil in a cast iron skillet over medium-high heat until it shimmers and begins to smoke.
  6. Place tuna in the pan and sear for exactly 45–60 seconds per side until a mahogany crust forms.
  7. Transfer steaks to a cutting board and let them rest for 2 minutes.
  8. Slice the tuna into 1/2 inch (1.25cm) thick pieces using a sharp knife.
