Ingredients:

  • 1.5 cups Arborio rice
  • 4 cups whole milk
  • 14 oz sweetened condensed milk
  • 2 cups water
  • 1 tbsp pure vanilla extract
  • 1 tsp ground cinnamon
  • 0.25 tsp ground nutmeg
  • 0.5 tsp sea salt
  • 0.5 cup raisins
  • 2 tbsp unsalted butter, cubed

Instructions:

  1. Rinse the rice under cold water for at least 60 seconds until the water runs clear to remove excess surface starch.
  2. Grease the inner ceramic pot of a 6-quart slow cooker with butter or non-stick spray.
  3. Combine the rinsed rice, whole milk, water, salt, ground cinnamon, and ground nutmeg in the slow cooker. Stir well to ensure ingredients are fully integrated.
  4. Cover and cook on the High setting for 3 hours.
  5. Stir in the vanilla extract, raisins, and cubed butter. Allow to rest for 20 minutes for carry-over thickening before serving.
