Ingredients:
- 2 cups (300g) fresh blackberries
- 1/2 cup (70g) finely diced Granny Smith apple
- 1/4 cup (60ml) red onion, finely minced
- 1/2 cup (100g) granulated sugar
- 1/2 cup (120ml) apple cider vinegar
- 1 tsp (2g) ground cinnamon
- 1/4 tsp (0.5g) ground cloves
- 1/2 tsp (1g) ground ginger
- 1/4 tsp (1.5g) sea salt
Instructions:
- Combine the blackberries, diced apple, and minced red onion in a medium stainless steel saucepan. Stir over medium heat for 3-5 minutes until the onions soften and the berries begin to release their juices.
- Pour in the apple cider vinegar and granulated sugar, then stir in the cinnamon, cloves, ginger, and salt. Increase the heat slightly to bring the mixture to a gentle boil.
- Reduce heat to a simmer and cook for 12-15 minutes, stirring frequently to prevent scorching, until the chutney reaches a syrupy, glossy consistency that coats the back of a spoon.
