Ingredients:
- 1.5 lb lean ground beef (93/7)
- 1 medium yellow onion, finely diced
- 3 cloves garlic, minced
- 2 medium carrots, diced small
- 1 cup frozen peas
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp dried oregano
- salt to taste
- black pepper to taste
- 3 large sweet potatoes, peeled and cubed
- 3 tbsp unsalted butter
- 1/4 cup whole milk
- 1/2 tsp salt
- 225g (approx. 2 cups) shredded mozzarella or sharp cheddar cheese
- fresh parsley for garnish
Instructions:
- Heat olive oil in a large skillet over medium-high heat. Add the ground beef, breaking it apart with a wooden spoon, and cook until browned.
- Stir in the diced onions and carrots, cooking for 5-7 minutes until the onions are translucent.
- Add the minced garlic, smoked paprika, and oregano. Stir for 1 minute until the spices are fragrant.
- Fold in the frozen peas, remove from heat, and season with salt and pepper.
- Place cubed sweet potatoes in a large pot of salted water, bring to a boil, and simmer for 12-15 minutes until tender.
- Drain the potatoes and return them to the pot. Add butter and milk, then mash vigorously until smooth.
- Preheat your oven to 400°F (200°C).
- Spread the beef mixture evenly across the bottom of a 9x13 inch baking dish.
- Spoon the sweet potato mash over the beef layer and smooth the top with a spatula.
- Top with shredded cheese and bake until the cheese is golden and bubbling.
- Garnish with fresh parsley before serving.
