Ingredients:

  • 1 lb lean ground beef
  • 1 tbsp olive oil
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup heavy cream
  • 1 cup beef broth
  • 2 cups shredded sharp cheddar cheese
  • 1 tsp smoked paprika
  • 1/2 tsp onion powder
  • 3 cups gold potatoes, peeled and sliced into 1/4 inch rounds
  • 1 cup frozen peas, thawed
  • 1 cup shredded mozzarella

Instructions:

  1. Heat olive oil in a skillet over medium-high heat. Add ground beef and diced onion, cooking until the beef is browned and the onions are translucent.
  2. Stir in minced garlic, salt, and pepper for 60 seconds until fragrant.
  3. In a medium mixing bowl, whisk together heavy cream, beef broth, smoked paprika, and onion powder.
  4. In a 9x13 inch baking dish, spread half of the browned beef on the bottom.
  5. Layer half of the sliced potatoes over the meat, followed by the thawed frozen peas.
  6. Pour half of the cream mixture over the top.
  7. Repeat the layers once more with the remaining beef, potatoes, and cream mixture.
  8. Top the casserole with shredded cheddar and mozzarella cheeses.
  9. Bake at 375°F (190°C) for 30 minutes, or until potatoes are tender.
  10. Switch to the broiler for 2–3 minutes until the cheese is bubbling and mahogany-colored.
