Ingredients:
- 1 lb lean ground beef
- 1 tbsp olive oil
- 1 medium yellow onion, diced
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup heavy cream
- 1 cup beef broth
- 2 cups shredded sharp cheddar cheese
- 1 tsp smoked paprika
- 1/2 tsp onion powder
- 3 cups gold potatoes, peeled and sliced into 1/4 inch rounds
- 1 cup frozen peas, thawed
- 1 cup shredded mozzarella
Instructions:
- Heat olive oil in a skillet over medium-high heat. Add ground beef and diced onion, cooking until the beef is browned and the onions are translucent.
- Stir in minced garlic, salt, and pepper for 60 seconds until fragrant.
- In a medium mixing bowl, whisk together heavy cream, beef broth, smoked paprika, and onion powder.
- In a 9x13 inch baking dish, spread half of the browned beef on the bottom.
- Layer half of the sliced potatoes over the meat, followed by the thawed frozen peas.
- Pour half of the cream mixture over the top.
- Repeat the layers once more with the remaining beef, potatoes, and cream mixture.
- Top the casserole with shredded cheddar and mozzarella cheeses.
- Bake at 375°F (190°C) for 30 minutes, or until potatoes are tender.
- Switch to the broiler for 2–3 minutes until the cheese is bubbling and mahogany-colored.
