Ingredients:

  • 4 6 oz salmon fillets
  • 1 tbsp olive oil
  • 1/2 tsp sea salt
  • 1/4 tsp cracked black pepper
  • 1/2 tsp garlic powder
  • 1 cup fresh blackberries
  • 1/4 cup balsamic vinegar
  • 1 tbsp honey
  • 1 clove garlic, minced
  • 1 tsp fresh thyme leaves
  • 1 tsp lemon juice

Instructions:

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Pat the salmon fillets dry with a paper towel. Drizzle with olive oil and rub in the sea salt, cracked black pepper, and garlic powder.
  3. Place fillets on the baking sheet skin-side down and bake for 12–15 minutes, or until the internal temperature reaches approximately 135°F (57°C).
  4. While the salmon bakes, combine blackberries, balsamic vinegar, honey, minced garlic, and thyme in a small saucepan over medium heat.
  5. Use a whisk or fork to mash the berries as they soften; simmer for 8–10 minutes until the liquid reduces by half into a syrupy glaze.
  6. Stir in the lemon juice and brush the blackberry balsamic reduction generously over the roasted salmon fillets.
  7. Return to the oven for 2–3 minutes to set the glaze, ensuring the fish reaches a final internal temperature of 145°F (63°C).
