Ingredients:
- 4 6 oz salmon fillets
- 1 tbsp olive oil
- 1/2 tsp sea salt
- 1/4 tsp cracked black pepper
- 1/2 tsp garlic powder
- 1 cup fresh blackberries
- 1/4 cup balsamic vinegar
- 1 tbsp honey
- 1 clove garlic, minced
- 1 tsp fresh thyme leaves
- 1 tsp lemon juice
Instructions:
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Pat the salmon fillets dry with a paper towel. Drizzle with olive oil and rub in the sea salt, cracked black pepper, and garlic powder.
- Place fillets on the baking sheet skin-side down and bake for 12–15 minutes, or until the internal temperature reaches approximately 135°F (57°C).
- While the salmon bakes, combine blackberries, balsamic vinegar, honey, minced garlic, and thyme in a small saucepan over medium heat.
- Use a whisk or fork to mash the berries as they soften; simmer for 8–10 minutes until the liquid reduces by half into a syrupy glaze.
- Stir in the lemon juice and brush the blackberry balsamic reduction generously over the roasted salmon fillets.
- Return to the oven for 2–3 minutes to set the glaze, ensuring the fish reaches a final internal temperature of 145°F (63°C).
