Ingredients:

  • 3/4 cup all-purpose flour
  • 3/4 cup milk
  • 3 large eggs
  • 1 tbsp honey
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 3 tbsp unsalted butter

Instructions:

  1. Place a 10-inch cast iron skillet in the oven and preheat to 425°F (218°C).
  2. Carefully remove the hot pan from the oven and add the butter, swirling until completely melted and foaming.
  3. Combine flour, milk, eggs, honey, vanilla, and salt in a blender and blend on high for 30 seconds until smooth and frothy.
  4. Allow the batter to sit for 5 minutes to let air bubbles settle.
  5. Quickly pour the batter into the center of the sizzling skillet.
  6. Immediately return the pan to the oven and bake for 15–20 minutes without opening the door, until the edges are towering and mahogany-brown.
