Ingredients:

  • 1/3 cup extra virgin olive oil
  • 1/4 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 4 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes
  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 large red onion, cut into 1-inch chunks
  • 2 medium bell peppers, cut into 1-inch chunks
  • 1 tbsp olive oil

Instructions:

  1. In a Ziploc bag or bowl, whisk together the olive oil, lemon juice, zest, minced garlic, oregano, salt, and pepper.
  2. Add the cubed chicken breasts to the marinade, ensuring every piece is fully submerged. Seal and refrigerate for 2 to 4 hours.
  3. Remove the chicken from the marinade.
  4. Slide the chicken cubes, red onion, and bell pepper chunks onto skewers, alternating between meat and vegetables.
  5. Brush the grill or grill pan with 1 tbsp olive oil and grill the skewers over medium-high heat until the chicken is charred and reaches an internal temperature of 165°F (74°C).
