Ingredients:
- 1/3 cup extra virgin olive oil
- 1/4 cup fresh lemon juice
- 1 tbsp lemon zest
- 4 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/4 tsp red pepper flakes
- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 large red onion, cut into 1-inch chunks
- 2 medium bell peppers, cut into 1-inch chunks
- 1 tbsp olive oil
Instructions:
- In a Ziploc bag or bowl, whisk together the olive oil, lemon juice, zest, minced garlic, oregano, salt, and pepper.
- Add the cubed chicken breasts to the marinade, ensuring every piece is fully submerged. Seal and refrigerate for 2 to 4 hours.
- Remove the chicken from the marinade.
- Slide the chicken cubes, red onion, and bell pepper chunks onto skewers, alternating between meat and vegetables.
- Brush the grill or grill pan with 1 tbsp olive oil and grill the skewers over medium-high heat until the chicken is charred and reaches an internal temperature of 165°F (74°C).
