Ingredients:

  • 1.5 lb white fish fillets (Cod, Halibut, Mahi Mahi, or Tilapia)
  • 1/2 tsp kosher salt
  • 1/4 tsp cracked black pepper
  • 3 tbsp unsalted butter, melted
  • 2 tbsp fresh lemon juice
  • 1 tbsp lemon zest
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 whole lemon, thinly sliced into rounds
  • 2 tbsp fresh parsley, chopped

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. Pat the fish fillets completely dry with paper towels and season both sides with salt and pepper.
  3. In a small mixing bowl, whisk together the melted butter, lemon juice, lemon zest, minced garlic, and dried oregano.
  4. Place the fillets on the prepared baking sheet and brush the lemon butter mixture generously over the top of each piece.
  5. Place two thin lemon slices on top of each fillet to keep the fish moist during roasting.
  6. Bake for 12–15 minutes until the fish changes from translucent to an opaque, pearly white and the sauce is bubbling.
  7. Remove from the oven, garnish with fresh chopped parsley, and let the fish rest for 2 minutes before serving.
