Ingredients:

  • 6 cups (900g) fresh blackberries
  • 3/4 cup (150g) granulated sugar
  • 1 tbsp (15ml) lemon juice
  • 1 tsp (2g) ground cinnamon
  • 1/4 tsp (1.5g) salt
  • 1/2 cup (115g) unsalted butter
  • 1 cup (125g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1 tbsp (12g) baking powder
  • 1/2 tsp (3g) salt
  • 3/4 cup (180ml) whole milk
  • 1 tsp (5ml) vanilla extract

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, toss the blackberries with 3/4 cup sugar, lemon juice, cinnamon, and salt. Let them sit for 5-10 minutes until a thick syrup forms.
  3. Place the 1/2 cup of butter in a 9x9 inch baking dish and put it in the oven for a few minutes until melted. Remove and swirl to coat the bottom and sides.
  4. In a bowl, whisk together the flour, 1 cup sugar, baking powder, and salt.
  5. Stir in the milk and vanilla extract. Mix until just combined; do not overwork the batter.
  6. Pour the berry mixture directly over the melted butter in the baking dish.
  7. Spoon the batter over the berries in dollops, leaving a small gap at the edges for juices to bubble up.
  8. Bake for 40-45 minutes until the crust is mahogany-colored and crisp.
