French Onion Chicken and Rice

French Onion Chicken and Rice is a cheesy, one-pan meal with tender chicken, caramelized onions, and flavorful rice.

Ingredients
  

  • 4 chicken thighs or breasts
  • 1 cup long-grain rice
  • 2 yellow onions sliced
  • 2 cups chicken broth
  • 1 packet French onion soup mix
  • 1 cup shredded Gruyère or Swiss cheese
  • 2 tbsp butter
  • 1 tbsp oil
  • 1 tsp thyme
  • Salt and pepper to taste

Instructions
 

  • Season and sear chicken in a hot pan until golden brown. Remove and set aside.
  • Caramelize onions in butter over medium heat, adding thyme.
  • Add rice, soup mix, and broth to the pan. Stir and let it simmer.
  • Nestle chicken in the rice, top with cheese, and bake at 375°F (190°C) for 25 minutes.

Notes

  • Use brown rice for a healthier option.
  • Add French-fried onions for extra crunch.
