French Onion Chicken and Rice

French Onion Chicken and Rice is a cheesy, one-pan meal with tender chicken, caramelized onions, and flavorful rice.

Ingredients
  

  • 4 chicken thighs or breasts
  • 1 cup long-grain rice
  • 2 yellow onions sliced
  • 2 cups chicken broth
  • 1 packet French onion soup mix
  • 1 cup shredded Gruyère or Swiss cheese
  • 2 tbsp butter
  • 1 tbsp oil
  • 1 tsp thyme
  • Salt and pepper to taste

Method
 

  1. Season and sear chicken in a hot pan until golden brown. Remove and set aside.
  2. Caramelize onions in butter over medium heat, adding thyme.
  3. Add rice, soup mix, and broth to the pan. Stir and let it simmer.
  4. Nestle chicken in the rice, top with cheese, and bake at 375°F (190°C) for 25 minutes.

Notes

  • Use brown rice for a healthier option.
  • Add French-fried onions for extra crunch.
