Ingredients
  

  • 3-4 lb rump roast
  • 2 tsp salt
  • 1 tsp black pepper
  • 3 cloves garlic minced
  • 1 tsp rosemary
  • 1 tsp thyme
  • 2 tbsp olive oil
  • 1 cup beef broth

Method
 

  1. Preheat oven to 300°F.
  2. Rub roast with salt, pepper, garlic, rosemary, and thyme.
  3. Sears are in a hot pan for 2 minutes per side.
  4. Place in a roasting pan with broth.
  5. Bake for 20-30 minutes per pound using a meat thermometer.
  6. Rest for 15-20 minutes, then slice against the grain.

Notes

  • Use low heat for a tender roast.
  • Let rest before slicing to keep juices inside.
